Under the sea takes on a whole new meaning at Fish Pool, JW Marriott Singapore South Beach’s underwater cocktail bar in The NCO Club. It’s open Wednesdays to Saturdays, when you can wine and dine with interactive mermaid performances in their Olympic-sized diving pool, happening each night at 7.15pm.

Treat yourself to a selection of raw, premium seafood inspired by Asian, European and Latin American flavours – think Cured Yellowtail ($24++) with rock melon and yuzu pepper sauce; and Seabass Crudo ($26++) topped with seaweed powder and sliced truffle.

On the drinks front, check out Ocean Inspiration ($28++) for an oceanic tipple concocted with oyster tincture and smoky 10 year-Laphroaig, or R&T Heights ($26++) – rum and tonic, rather than gin and tonic, with a tropical twist. If you’re fresh to the bar scene but would like to dive straight into Singapore’s best drinks, do add Jigger & Pony’s award-winning cocktails to your list. The bar has consistently been ranked on Asia’s 50 Best Bars list.

The bar’s winning strategy is to take on the classics, give them their own spin, and do them really well. Like in their version of the Espresso Martini ($28++), which taps into the flavour profile of coffee flower honey to elevate the nuanced bitterness of espresso and cacao tuile in the drink.

The Spicy Margarita ($28++) is another winning drink where you can choose the spicy level, and the drink is served with an agave lollipop instead of the usual salt rim. We also recommend giving Ugly Tomatoes ($28++) a shot. This drink combines Hendrick’s Orbium gin withheirloom beefsteak tomatoes, kummel spices, and elderflower.

If you’re in need of a drink after work, pop by to enjoy Happy Hour, which runs from 4pm-8pm daily. That’s when you’ll get house pours on beer, red, and white wines, and other liquors from $10++ a glass.

Dive into the cocktail collection inspired by familiar Singaporean flavours, like the drink named Laksa ($20++) featuring kafir lime leaves and clarified coconut milk. For a more refreshing tipple, pick Exploring Botanica ($20++) based on Singapore Botanic Gardens, of course.

We know better than to drink on an empty stomach, but there’s no need to head anywhere else for a pre-game snack. Atrium Bar 317 serves bar bites like Truffle Fries ($20++) and Assorted Cheese and Cold Cuts ($38++).

10. Native

Those whose hobbies include checking out cocktail bars probably don’t need an introduction to Native. Here, the cocktails are inspired by regional ingredients – think a Black Rice ($26++) whiskey, made up of toasted black rice, coconut, and wild berries; and Peranakan ($28++) – a concoction of jackfruit rum, laksa leaves, goat milk, candlenut, and gula melaka.

The location itself is a cosy 3-storey shophouse on Amoy Street, with one of the floors being turned into a fermentation lab where they experiment with their creations. They once became famous for a drink that included edible ants, and have since maintained their status as a bar that focuses on sustainability and innovation.

11. Forest3 Cafe

If you need a new after-work hangout spot, it’s time to bookmark Forest3 Cafe, a darts and KTV bar in the CBD that’s practically an adult playground. Grab a drink and head to one of the many dart machines – there are 22 to be exact.

You’ll have to purchase Dartslive credits (from $10), which come with 2 hours to play, with a minimum spend of 1 drink per person. But don’t worry, prices here are reasonable. House pours starting from $10, or opt for a bucket bundle at $45 for 5 bottles of Carlsberg, Heineken, or Corona beer. House darts are free at the counter – you just have to pay a $3 deposit, which you’ll get back upon returning all darts.

If you’re more of a KTV person, grab the mic and show off your singing skills on the open-style karaoke podium.

12. The Store

Cocktail bars may be slightly more expensive, but The Store has a pretty good lobang going on. From 4pm to 6pm every Tuesday to Saturday, you can get $11 cocktails off a special menu. Some options include the Espresso Nutty-Ni served with a wafer and the tropical Jungle Mule.

For sharing plates, have your pick from the White Wine Mussels ($28++) served with garlic bread or a set of 3  Wagyu Sliders ($32++). Heartier mains include Onglet Steak ($38++) and Lamb Rack ($38++).

The bar itself is super aesthetic too. Upon entering The Store, it’ll feel as if you just stepped into someone’s living room, complete with leather couches and colourful rugs. Just keep a lookout for the entrance, though – it’s rather hidden with no signboards outside.

13. Sago House

Sago House is easily one of the coolest speakeasies in Chinatown. It’s tucked in between the stretch of eateries along Sago Street; all you have to do is look for a green door which will open up to a flight of stairs leading you to the 3rd floor. But don’t be fooled by its unpretentiousness; the cocktails here are worth shouting about. 

We can’t recommend a cocktail here, since the menu changes every week. But look forward to unique tipples such as Mala Xiao La, a concoction of Bombay Sapphire Gin, Mala Cordial, watermelon, and lemon. Otherwise, just ask the bartender to shake up a bespoke cocktail according to your tastes.

14. Level 33

Beer fans looking for a new watering hole can now make their way to LeVel 33, Singapore’s highest urban microbrewery. Located on the 33rd level of Marina Bay Financial Centre Tower 1, the bar provides a good space to catch the sunset and escape the crowds at the same time.

Out of their huge brewing kettles come 5 types of craft beers – the Blond Lager, India Pale Ale, Stout, House Porter, and Wheat Beer. You can get a taste of all 5 when you order the Beer Tasting Paddle ($26.90++) that comes with 100ml tasters.

If you prefer something lighter, check out the bar’s craft beer cocktails. We recommend their signature Flair From Paris ($26++), which consists of the wheat beer, lychee syrup, berry syrup, champagne, and creme de cassis. Food wise, check out their Australian Barramundi ($39++), a pan-seared fillet served with charcoal-grilled squid and Tuscan kale.

15. Long Bar

We’ve tasted numerous Singapore Slings around the island, but if you’re looking for the birthplace of this drink, Long Bar at Raffles Hotel is where you should fix your eyes and palate on.

Their Original Singapore Sling ($44++) was first created in 1915 for the sole purpose of giving women an excuse to drink alcohol in public without being judged as immodest. The drink was created with a feminine pink hue to pass off as nothing more than fruit juice when it’s actually infused with a clear base of gin.

The bar has a unique culture of encouraging guests to sweep peanut shells off tables, so when you see the floor littered with peanut remnants, don’t be surprised. We’re quite sure this is the only place in Singapore that doesn’t penalise people for “littering”.

16. Atlas

If you’re looking for an extra luxurious drinking experience, check out Atlas – a bar inspired by The Great Gatsby. The interior is opulently decorated with gold-plated statues, posh sofas and an alcohol shelf stretching across 2 levels. The ceiling is another stunner as it’s intricately decorated with bronze-coloured details of antelopes galloping through trees and fields.

The bar has over 1,000 varieties of gins and tonics, but if you want a personalised surprise, opt for the Bartender’s Choice G&T (from $27++). These drinks use a rotating selection of gin from the Gin Tower, and might differ night-to-night, depending on who’s on bartending duty that day.

Pair your drink with some of the bar’s delicious red meats. We recommend the classic Steak Frites ($52++), which has been elevated to include smoked bone marrow butter to be served alongside fries, jus, and watercress salad.

This is the only bar in Singapore that doesn’t have a cocktail menu because it believes that every drink should be made differently, just like people’s characters.

28 HongKong Street is a name that many might’ve heard of – but whether we’ve seen it, might be a different story altogether. You’ll have to look hard to find this speakeasy bar hidden in a shophouse on HongKong Street. Enter though, and you’ll be in a secret enclave setting the mood for a night of deep conversations and people-watching alike.

You won’t go wrong with the bar’s menu. Ask the bartender if they have any seasonal specials, or sip on an array of American craft cocktails. Some highlights include the smooth and silky Cognac Milk Punch ($28++) mixed with Rémy Martin VSOP and spices. To satisfy the tummy, nibble on small plates like Brussels & bacon ($18++) or sandwiches like Beef Chilly Dog ($18++).

20. Level Up

Jokingly self-proclaimed as ‘The Worst Bar in Singapore, ‘ The Spiffy Dapper is a speakeasy along River Valley that doesn’t take itself too seriously.

Rest assured, that is far from the truth. Drinks wise, The Spiffy Dapper’s got an impressive range of alcohol selections, and a drink menu carefully crafted by the team.

Out of all the drinks on their menu, we recommend giving their Shiekh On The Level ($26++) a shot. The beverage contains ingredients such as Turkish black tea, gin sour, and cardamom before being topped with a Turkish delight for a sweet finish.

If you’ve been to Beauty World Food Centre, you might have come across Wiped Out amongst the other eateries there. This place gives off the heartland atmosphere with its casual setting and also the surrounding HDB blocks nearby. Dubbed the highest rooftop bar in Singapore, NOVA is on the 63rd floor of One Raffles Place and offers an unobstructed panoramic view of the city. If you’re looking for rooftop bars in Singapore to enjoy a sky-high experience with good food and chill vibes, NOVA is one for the books.

Before we dive into the world of NOVA, here’s a quick guide to getting there: head to the 62nd floor of One Raffles Place, where the entrance of the rooftop bar HighHouse greets you.

There, you’ll see another lift that brings you up to NOVA. This hidden, secretive element piqued our curiosity even before we set foot into the rooftop bar, and as soon as the elevator door opened, we were in awe of how stunning the space was.

The first thing that grabbed our attention was this colossal, star-shaped steel sculpture in the air. Fun fact: this beautiful centrepiece named ASTRA was designed by light artist, Jun Ong, who is based in Kuala Lumpur. While the artwork can mean many things to different people, Jun created it to reflect the bustling, dynamic city vibes.

ASTRA is even more spectacular against the sunset, showcasing its vibrant colours best at night. Seeing it in real life, we could see why it’s the most popular spot for taking pictures.

Sweeping view of Marina Bay

The sky is – quite literally – the limit at NOVA, as the bar is perched 282m above ground. You get the best view of Marina Bay here as it overlooks all the iconic skyscrapers in Singapore.

If time permits, we recommend getting here in the evening to catch the sunset; taking a sip of their cocktail while gazing at the sunset offered us some respite from the hustle and bustle of the city.

The rooftop bar is cleverly separated into 2 levels, where you have the DJ booth playing all kinds of music genres on the lower level with occasional live performances. Fun fact, the furniture at the lower deck is actually modular. This means the space can be transformed into a dance floor for guests to get their boogie on.

It comes with Grilled Spanish Octopus doused in Thai-spice dressing and a generous serving of Seasonal Vegetable Tempura, paired with sweet-spicy Szechuan garlic sauce.

Slow Cooked Australian Lamb Ribs with 5 pieces of Crispy Chicken

Meat lovers will love the choice of platter comprising Slow Cooked Australian Lamb Ribs in a rack of 5, alongside 5 pieces of Crispy Chicken. The former is marinated in garlic and scallion XO sauce, while the latter is evenly coated in gochujang sauce drizzled with mayonnaise. We appreciated the side of sesame cabbage slaw as it helped to quell the heavy flavours.

Moving on to cocktails, we tried 3 of their unique creations: the Sticky Mango Highball ($20) was a collective favourite as it was reminiscent of a sweet fruit-flavoured beverage, and is a great choice for those who don’t fancy strong alcoholic drinks.

The Roselle ($22) tasted just as good as it looked—this tangy concoction features a winning combination of gin, sour roselle, sweet red vermouth, and soda. For something a little stronger, we recommend the Tobacco & Grain ($22), starring Haku vodka, and champagne. This drink strikes a good balance of spicy and woody notes, and the flavour grows on you the more you drink it.

Secret bar alert! Some of you may recall a hidden izakaya-style bar in Bugis that only reveals itself once you “enter” a row of vending machines. The same folks behind that bar – Ume San 100 – have opened another bar of a similar concept but this time you’ll discover that the Japanese speakeasy is tucked behind a row of bookshelves.

You can find Ume Maru on the fifth floor of Far East Plaza and we highly recommend you add this place to your list of things to do in Orchard at night.

For anyone unaware of its existence, Ume Maru looks like a typical Japanese bookstore from the outside. The floor-to-ceiling shelves feature popular titles on display such as Naruto, School Rumble, and Rave Master. If that visual has got you anime and manga lovers excited, just wait till you get inside.

Simply push open the bookshelf right under the lighted up “Ume Maru” sign and you’ll find yourself in a bar themed after Jimbocho, Tokyo’s popular bookstore district. Video clips of popular anime series are projected on the walls and light features in the shape of books are hanging from the ceiling.

And yes, feel free to browse through the comic books while sipping on their cocktails.


What’s on the menu at Ume Maru?

During the day, the establishment acts as a Bento Bar serving lunch sets (from $9.90) between 12pm and 2.30pm. Dishes include Chicken Teriyaki Bento ($9.90), Ebi Curry Bento ($15.90), and Happy Avocado Maki ($15).

Come night, the place turns into a bar serving sharing dishes, mains, and plenty of drinks. To start off, the group can order Wagyu Kushi ($24) grilled skewers, Truffle Hotplate Maki ($20), and Crudo ($18) with salmon, tuna, and scallops.

If a full-on dinner is on the cards, then continue the night with their signature Yuzu Soba ($24), Spicy Miso Dry Ramen ($18), or Sushi Moriawase ($28).

Now, let’s talk about the drinks. It goes without saying that Ume Maru serves umeshu-based cocktails. The strawberry version of this plum wine is mixed with tequila in a cocktail known as Songbird ($22).

One you’ll see ordered consistently throughout the evening is Matxha, featuring matcha umeshu, of course. The concoction also contains matcha tea, elderflower, and yuzu marmalade.

Light of Nara ($22) is another cocktail that features muscat umeshu, nashi pear umeshu, and rose vermouth. Paying homage to the city of Nara, the drink is served in a gorgeous deer-shaped glass too.

Apart from the cocktails, patrons will be able to savour highballs (from $16) and a vast collection of house craft whiskies (from $16). Choose to pair these with your food or with a curated selection of chocolate bonbons.

Unanimously dubbed “Gotham City building” amongst Singaporeans, Parkview Square looks like it came straight out of a Batman film. Drawing inspiration from NYC’s Chanin Building – a skyscraper in Manhattan – its exterior features a brown lacquer finish, and its open plaza spots many statues of famous intellectuals including Mozart and Rembrandt.

If admiring the building from outside isn’t enough, head on in and be transported back to 1920s New Orleans – think red carpets, intricate wall carvings, stained glass windows, and jazz.

Nestled in the centre of Bugis, the towering building of Parkview Square is hard to miss, considering how different it looks compared to the surrounding malls and hotels. 

Not only does it look expensive, it actually is expensive. Parkview Square has previously been nominated as one of the most costly office buildings in our city. 

Fun fact: it’s also home to several foreign embassies including the United Arab Emirates, Austria, and Mongolia.

The 3rd floor used to be the grounds for Parkview Museum, which used to hold frequent exhibitions focusing on international contemporary art. Unfortunately, it has closed down permanently and relocated its headquarters to Beijing instead.

However, that doesn’t mean the building lost all its artistic panache. One of its main art pieces, The Golden Crane, still remains outside the entrance of the building. 

It depicts a crane who yearns to go back to its birthplace, a temple in Hubei, China. There is a Chinese poem scripted on its base which talks about homesickness, and the creature is also facing in the direction of China.

Before ATLAS bar got its reputation for being a gin enthusiast hotspot, it was actually a wine connoisseur’s playground. This grandiose bar was named Divine Wine Extraordinaire at that time, and what is a 3-storey gin tower now was previously a wine chiller.

It currently houses the largest gin collection in the world so gin enthusiasts will be spoilt for choice. Yes, there are over 1,000 different gins here, plus a good selection of other spirits.

Notable cocktails include the signature ATLAS Martini (from $26) – a complex concoction of Ford’s London Dry Gin, blanco vermouth, orange bitters, and Champagne vinegar. If you prefer something a little more zesty and elegant, try the ATLAS French 75 (from $26) – a mix of the same gin with some champagne, peach, lemon, and salt.

For something truly special and if you have $100k to drop, check out the Goût Americain 1907 Heidsieck & Co Monopole – touted as the world’s most expensive champagne that was found at the bottom of an ocean in a shipwreck.

For most of us, just knowing that we’re sitting within the vicinity of such an incredible piece of history is good enough. I mean, the bottles are over a hundred years old, survived a sinking ship, and there’s still champagne in them.

Although known mainly for its alcoholic beverages, the bar boasts a pretty extensive food menu too. Relish in refreshing starters such as Oysters Mignonette with Lemon (from $38) or if you’ve got space for a main, check out Steak Frites (from $48) – sirloin or ribeye topped with smoked bone marrow butter and paired with shoestring fries.

Exit Stage Left, a hidden bar by New World’s End

It’s no secret we have interesting bar concepts in Singapore, from a Harry Potter-themed bar with flaming cocktails to Lou Shang’s HDB estate aesthetic. And now, a new contender Exit Stage Left joins the lineup of themed hidden bars in Singapore

Exit Stage Left is hidden in a back alley along Desker Road in Jalan Besar. Step through it’s red door and you’ll feel like you’ve travelled back in time to the 1960s. But unlike most bars, this new one has some secrets of its own.

Of course, this bar, like any other, takes reservations and thirsty walk-ins. First of all, it’s located at the back of a popular immersive audio tour, New World’s End

This tour takes place in a “replica” of New World Amusement Park which actually stood nearby in the 1920s. Set in the 60s, the story follows 2 star-crossed lovers – a projectionist at a cinema and a cabaret singer. We won’t spoil the ending but it involves one of Singapore’s largest civil disasters – the Hotel New World collapse.

One of the stops in the tour is a vibey light installation modelled after a cabaret in this now-defunct recreation spot. But push past its red door and curtains and you’ll find this bar that’s a homage to Singapore’s swingin’ 60s. Think: vintage furnishings, tastefully warm lighting with splashes of neon. Checkerboard floors and old-school leather bar stools surround the bar.

 

While they may not have the widest selection of spirits, trust us when we say this bar has nostalgia on tap. It’s the endpoint for New World’s End, but even if you didn’t sign-up for the hour-long immersive experience, you can still make a reservation via Exit Stage Left’s Instagram. 


Singapore-inspired cocktails & free-flow kacang puteh

In its own special way, each specialty cocktail at Exit Stage Left is a homage to our nation’s storied past. Some even reference plotlines from New World’s End, such as The Songbird ($24) which features a blend of dark, bold, and bittersweet flavours.

As a bonus, locally distilled spirits are incorporated into all their drinks. So while these drinks aren’t exactly from the 60s, every sip includes flavours brewed on our soil. Here, you can try G&Ts made with Tanglin Gin, or pineapple-infused vodka from Singapore Distillery.

Even if you don’t drink, Exit Stage Left also offers 2 mocktails inspired by, and named after, Wang Sa and Ye Fong – a local comedic duo from our past. As for snacks, you can enjoy Kachang Puteh for $4/cone. If all that walking during the audio tour has made you hungry, you can pay $6 for a free flow of these assorted nuts all night.
